  • 1/2 cup chopped carrot
  • 2 tablespoons vegetable oil
  • 1/2 cup chopped red bell pepper
  • 2 teaspoons minced garlic
  • 1 32-ounce carton vegetable stock
  • 2 15 ounce cans of black beans or 3 to 4 cups cooked black beans
  • 1 to 2 teaspoons salt

  • 1 small yellow onion, diced (about 3/4 cup)
  • 2 pounds chopped butternut squash (about 6 heaping cups)

  • 1/2 teaspoon curry powder

  • 2 ounces low-fat (neufchatel) cream cheese
  • 1 tablespoon brown sugar, more to taste

  • ½ cup finely diced carrots
  • ½ cup finely diced celery
  • 1 medium onion finely diced
  • 1 teaspoon olive oil
  • 3 garlic cloves, minced
  • 32 ounces chicken stock
  • 2 cups water
  • 2 cups milk, divided
  • ½ teaspoon pepper
  • ½ teaspoon dried oregano
  • 1 bay leaf

  • 2 cups water (may need to add more)
  • 2 cups of carrots diced (just eye ball it)
  • 2 cups of celery diced (just eye ball it)
  • 1/2 onion diced small
  • 1 tsp of thyme
  • 1 bay leaf
  • 1 tsp of garlic salt (or use minced garlic)

  • 4 pounds yellow onions, chopped
  • 1 teaspoon salt
  • 1 tablespoon flour
  • 32 ounces beef stock
  • 14.5 ounces chicken stock
  • 1/2 teaspoon thyme
  • 2 tablespoons beef base
  • Croutons
  • Cheese (Combine these two cheeses in a bowl, and mix well)

  • 1 cup heavy whipping cream
  • 1/4 cup all-purpose flour
  • 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • pinch of crushed red pepper flakes (or more as desired)
  • 2 cups shredded cheddar cheese
